Product Overview
Biochemazone Simulated Milk Ultrafiltrate (SMUF) BZ670 reproduces the salt composition of the serum phase of cow’s milk, as described by Jenness and Koops (1962). It is the standard solvent for dispersing caseins and whey proteins in a realistic mineral environment, and for studying membrane fouling, heat stability and mineral equilibria in dairy processing.
SMUF contains potassium and sodium phosphates, citrates, chlorides, sulfate and carbonate with calcium and magnesium, and has a pH of about 6.6–6.7, close to that of fresh milk. Because calcium phosphate can precipitate on storage, the kit is supplied as two dry parts, dissolved separately and combined just before use. A version with lactose (milk-derived) is also offered.
